Black Bean Brownies
1 can black beans 4 eggs 3 Tbsp Coconut oil, melted 1/3 c Maple sugar 1 Tsp Vanilla 3 Tbsp Cocoa Powder 1/4 tsp Instant coffee powder 1/4 tsp salt 1/4 tsp baking powder 1/4 tsp baking soda 1/2 c walnuts and or chocolate chips
Bake at 350 in a greased baking dish for 30 min or when you insert a toothpick and it comes out clean. Enjoy!
Judy Schure’s Cucumber Open Faced Sandwich
3 cucumbers, peeled and sliced thin ( seedless are great)
8 ounces cream cheese, softened ( I used low fat)
1 package hidden valley ranch dressing mix
½ cup mayonnaise
¼ cup sour cream – I used low fat
1 loaf rye cocktail bread – I used a rye from bakery and a pumpernickle)
Dill weed to garnish
Place cream cheese, dressing mix, mayonnaise and sour cream in a bowl and
mix together until well blended.
Chill at least one hour for flavors to blend
Spread each bread slice with a tsp. or more of the mixture.
Top with a cucumber slice.
Sprinkle with dill weed and arrange on platter
